Super basic, but a tradition in my family. St. Patrick’s Day corned beef and veggies. Look’s super plain but the broth it’s cooked in, with lots of peppercorns, makes it real tasty.

Dinner for 1 using leftovers, BBQ Chicken Quesadilla:

Chopped up some of last night’s BBQ Chicken (breast) and threw it in a Jack/Cheddar Quesadilla with corn, black beans, and green onions. Grilled it on a skillet with butter and Parmesan on the outside for crisp.

Topped it off with BBQ/Tapatio/Crema and Avocado Salsa. Opted to not squeeze the lemon in the picture on it, the sourness killed the sweet spicy BBQ sauce. Much better without it.

It blows my mind how good phone cameras have gotten. These frozen blackberries are tiny in person. It’s no DSLR quality but still pretty good.

Quick dinner for 1, Japanese Ramen Soup.

Tonight my family wasn’t home, so I only needed to cook for myself, and I didn’t feel like going to the grocery store just for myself so I made do with stuff I already had:

  • Took a package of Top Ramen and threw out the MSG-filled flavor packet, and cooked the noodles in real chicken broth with some garlic, onion powder, soy sauce, sriracha, etc.
  • Added some fresh spinach as soon as the noodles were done, and let them naturally wilt in the hot broth
  • Grilled up some chicken breast, and some mushrooms, threw it on top
  • Threw in some corn kernels, and some chopped green onions
  • Finished it off with a soft-boiled egg. Had never made one before (Nailed it.)

Cheese Tortellini soup with chicken, spinach, fire roasted tomatoes, in a chicken/onion broth

Dinner: Southwest BBQ Pork salad.

  • Country-style pork ribs, grilled outside on the BBQ with homemade spicy BBQ sauce (with a little habenero) (without the bone)
  • on top of Romaine lettuce Salad with tomatoes, corn, black beans, and cucumber
  • Topped with diced avocado, crispy onion strings, cilantro, and BBQ Ranch dressing.

Tonight’s dinner was so fast and easy and delicious. Didn’t have to make any crazy sauces or dirty a lot of dishes. 

  • Pan-seared Salmon basted with butter, garlic, thyme and lemon
  • Orzo pasta with roasted veg (zuchinni, yellow squash, red orange and yellow sweet peppers, red onion) tossed in olive oil, lemon juice, feta, and green onions.
