I’m so sick of berries and fruits. I think I overdid it last week. Plus it was St. Patricks day so I made Green Tea and Cucumber Mojitos. Not Irish, but definitely green:

Muddle some mint and cucumber with simple syrup in a shaker, shake with light rum, green tea, club soda, ice and a squeeze of lime. (Equal parts is good for most people. I use more rum and less mixers but you can adjust to your taste) (shake LIGHTLY, club soda will expode)
Strain over fresh ice, and garnish with sliced cucumber, mint, and a lime.
You can buy simple syrup or make your own (equal parts sugar and water, bring to low simmer in a pot til sugar is dissolved, and then let cool). And you can add some cucumber in the pot to make cucumber simple syrup. You can do this in addition to or in lieu of muddling cucumber. Also you can use agave nectar instead of simple syrup. Healthier, lower glycemic index, but more expensice. Super refreshing. Enjoy!

Fresh Strawberry Martini with Mint and Blackberries 

Dinner for 1 using leftovers, BBQ Chicken Quesadilla:
Chopped up some of last night’s BBQ Chicken (breast) and threw it in a Jack/Cheddar Quesadilla with corn, black beans, and green onions. Grilled it on a skillet with butter and Parmesan on the outside for crisp.
Topped it off with BBQ/Tapatio/Crema and Avocado Salsa. Opted to not squeeze the lemon in the picture on it, the sourness killed the sweet spicy BBQ sauce. Much better without it.

It blows my mind how good phone cameras have gotten. These frozen blackberries are tiny in person. It’s no DSLR quality but still pretty good.

Quick dinner for 1, Japanese Ramen Soup.
Tonight my family wasn’t home, so I only needed to cook for myself, and I didn’t feel like going to the grocery store just for myself so I made do with stuff I already had:
Took a package of Top Ramen and threw out the MSG-filled flavor packet, and cooked the noodles in real chicken broth with some garlic, onion powder, soy sauce, sriracha, etc.
Added some fresh spinach as soon as the noodles were done, and let them naturally wilt in the hot broth
Grilled up some chicken breast, and some mushrooms, threw it on top
Threw in some corn kernels, and some chopped green onions
Finished it off with a soft-boiled egg. Had never made one before (Nailed it.)

Dinner: Southwest BBQ Pork salad.
Country-style pork ribs, grilled outside on the BBQ with homemade spicy BBQ sauce (with a little habenero) (without the bone)
on top of Romaine lettuce Salad with tomatoes, corn, black beans, and cucumber
Topped with diced avocado, crispy onion strings, cilantro, and BBQ Ranch dressing.
