Easy Easter cupcake Idea: I just made these for my family Easter party
Super easy. Just buy a box of white cake mix and a thing (can? jar?) of Vanilla frosting. Prepare the cake batter per box directions, then when it’s all mixed, separate it into smaller containers (I recommend 3 or 4) and add food colorings of your choice. I kept it bright pastels for Easter, but you can do whatever you like. Also color the frosting (shown here green) in another container.
Using a spoon, layer the colored batter into your paper cupcake cups. You can try to even out the layers using a wet finger, but it’s still pretty hard. I say just blob it down and however it lands is fine. They will not be perfect layers, but I like the random effect. Fill them to the normal level (3/4 full). I chose do go in a semi-rainbow pattern (Yellow, pink, lavender, blue) and topped it with green frosting, (after baking) kind of like grass for my “eggs” to sit on.
After you assemble your cake batter color layers, bake your cupcakes per box direction. When done, take out and let cool before frosting.
After frosting them, I added a couple of “eggs” on top. They are gummy candies with a harder coating called Trolli brand Sour Brite eggs, but you can use those chocolate hard shell candy eggs. or even jelly beans. Truth be told, I was originally going to use jelly beans, but at the market I saw the Trolli eggs and they were cheaper and look more like eggs, so I went for it.
