I’m so sick of berries and fruits. I think I overdid it last week. Plus it was St. Patricks day so I made Green Tea and Cucumber Mojitos. Not Irish, but definitely green:
- Muddle some mint and cucumber with simple syrup in a shaker, shake with light rum, green tea, club soda, ice and a squeeze of lime. (Equal parts is good for most people. I use more rum and less mixers but you can adjust to your taste) (shake LIGHTLY, club soda will expode)
- Strain over fresh ice, and garnish with sliced cucumber, mint, and a lime.
You can buy simple syrup or make your own (equal parts sugar and water, bring to low simmer in a pot til sugar is dissolved, and then let cool). And you can add some cucumber in the pot to make cucumber simple syrup. You can do this in addition to or in lieu of muddling cucumber. Also you can use agave nectar instead of simple syrup. Healthier, lower glycemic index, but more expensice. Super refreshing. Enjoy!
